Tip: How to configure the Email Subject
The default email subject (form text entry)
The default email subject is made from a text input field on the form.
On the form edit page there is a E-mail Subject Prefix: setting where you can add a prefix to what the user enters on the form. The reason I added the prefix is so you can easily identify the email as coming from your form just by looking at the subject in your email Inbox.
By default, the E-mail Subject Prefix: setting is:
[your site name] Contact:
This will become a prefix of the subject for the E-mail you receive. The subject the user types in the form will become the suffix. You can change this if you like.
Listed below is an optional list of field tags for fields you can add to the subject prefix.
Example: to include the name of the form sender, include this tag in the E-mail Subject Prefix: [from_name]

Optional E-mail Subject List (form option list)
On the form edit page there is a Optional E-mail Subject List: setting where you can add a list of subjects a user can select from when filling out the form. This option automatically removes the text entry and creates a subject drop down list on the form. Add as many subject options as you need, the drop down list on the contact form will be made automatically. Separate each subject option by pressing enter.

When you want an email subject that the form user cannot change:
There are two ways to do this:
On the form edit page, you can turn off the subject form input completely.
Find this setting: Subject field:, set it to “Not Available”. Then the email subject will become what you have set for the setting: E-mail Subject Prefix:
Or you can set just one subject option select. On the form edit page there is a Optional E-mail Subject List: setting where you can add a list of subjects a user can select from when filling out the form. Instead of adding a list, just add one. Then the email subject will become this (and also include the prefix).
